This my friends,is a cake to die for.Intensely chocolatey,rich and dastardly,it comes from the island of Capri-Italy and its just devine!There`s no flour at all,just a lot of ground almonds,which keep it moist and an awful lot of chocolate.For perfection,top with vanilla ice cream-dust with some cocoa powder,creme fraiche,thick yogurt or even some mascarpone200 gr unsalted butter200 gr good quality dark chocolate4 eggs separated170 gr caster sugar1 tsp vanilla extract250 gr almond mealIcing sugarPreheat the oven 170CGreased and line a 24cm cake pan with non-stick baking paperMelt the butter and set aside to coolProcess the chocolate until finely chopped,but still retaining a little texture (Alternatively,chop finely with a large knife)Place the egg yolks,sugar and vanilla extract in a bowl and beat until pale and thickFold in the chocolate,butter and almond meal (The mixture should be very thick)In a seperate bowl,whisk the eggwhites until soft peaks form.Gently fold in the chocolate mixtureSpoon into the cake pan,level the surface and bake for 50-60 minutes,until just firm to the touchSet aside to cool in the pan,then turn outServe dusted with icing sugar and with a scoop of vanilla ice-cream dusted with cocoa,if desired
